Green Hash for St. Patrick

Today is going to be quick and simple. An easy green meal for St. Paddy’s day! I made this hash of potatoes and green veggies for our St. Paddy’s day dinner. It was SO easy and all in one pot, for less clean up!

Here is this simple recipe:

1(or 2) cloves of crushed garlic

4 Potatoes, peeled

1 Zucchini

About 10 Brussel Sprouts cut in quarters

1 Small bunch of Asparagus

Heat your large skillet pan on your stove top. Use about 3 tablespoons of Evoo and toss in your garlic. Get a slight sizzle going and toss in your potatoes. Brown the potatoes and when they start to get soft toss in the brussel sprouts. Toss the items around so they get nice and mixed up. Let the brussels cook up a bit before tossing in the asparagus and zucchini. Cover the skillet and let the steam cook the veggies for a few minutes. I like my veggies crunchy, but cook as you like! Add salt and pepper to taste and enjoy!
