Favorite Amy’s

After a long weekend of partying and indulging, I’m looking for a quick, easy, and relatively healthy dinner tonight.  For convenience, I often turn to Amy’s Kitchen frozen meals, many of which are vegan.  My favorite, however, has got to be the Brown Rice, Black Eyed Peas, & Veggies Bowl.

It’s kind of tiny on its own, so I often serve it up over a pile of steamed broccoli and carrots, something I highly recommend.  It is quite savory, and has a good ratio of rice to other ingredients, but it’s the yummy ginger sauce that really brings this bowl to life.  Delicious!  This is just easy, satisfying food, you guys.  Perfect for a night of laziness like I intend on having this evening.
