Pop goes the cake!

After Sky’s post yesterday, I was inspired to post about this favorite from our household! They are CoCo Popcakes! You may have seen them popping out of a machine at your local grocery store, we did and my son was instantly transfixed.  Of course they had samples out, so we tried them. These have become a staple in our house. Both my son and I love them.  He replaced his beloved puff-puffs, with these pop-pops! I love that they are made with simple ingredients, just wheat, rice, corn and sea salt.  Each cake is 16 calories, and they are large!

They taste great with just about anything. I have had peanut butter, salsa, and seitan “chicken” salad on them (not all at once!).  They are as good to eat, as they are fun to watch being made! The best part is they have a great message on their packaging that clearly says:

Vegan, For the animals, For the environment, For our health”.  I love that!

    WOW! I’ve never seen those on the West Coast! They sound like the ethical, fun, version of my Corn Thins from yesterday! Jealous! -Sky 🙂
