Easy Meatless Monday Meal
Welcome to Fall, I hope everyone had a great summer. I’ve been finding all sorts of little gems to write about, but today I thought I start with a yummy meal! Today is the first day of classes at the school I teach at, so that means back to double duty for me. I love teaching, and I’m psyched to get back to work, but it also means being stretched just a little bit thinner for time, especially cooking a nice dinner at the end of the day. This is an easy meal I came up with by throwing together some leftovers that needed using up. It’s a pizza, it’s a tart, it’s a lot of yummy things rolled into one. I’ll tell you how I made it, but it is a versatile meal, put whatever you need to use up onto some puff pastry and viola, Meatless Monday mealtime, in no time at all.
Unroll 1 piece of vegan puff pastry onto a cookie sheet (I line mine with parchment)
For the filling:
Leftover cashew cheese (or 1/4 cup soaked cashews)
1 potato (baked or cooked in the microwave)
2 tablespoons tomato sauce
2 tablespoons nutritional yeast
Salt, pepper and garlic powder to taste.
Blend cashews in blender if you are using raw cashews. If not, start by putting your cashew cheese in a bowl, and adding the potato to it (you can take off the skin if you want to), add the rest of the ingredients and mash it all up. Spread in an even layer on the puff pastry and add whatever vegetable you have around. I used the asparagus it was delicious, but can easily imagine some broccoli or eggplant or anything really. Bake at 400 degrees for about 20-25 minutes (depending on toppings), puff pastry should brown slightly at the edges.
This could have a thousand variations, really anything would work, just don’t put so much topping that the puff pastry is overloaded and doesn’t cook.
